What You Need

Fried Egg Burrito Ingredients

  • 2 cloves garlic, finely chopped
  • 1 cup onion, diced
  • 1 can low sodium black beans, drained (not rinsed)
  • 1/2 cup pre-cooked rice (leftovers work nice for this meal and saves time)
  • 1 tortilla or burrito wrap (advised: search for 4g or extra of fiber per serving)
  • 2 eggs, fried (or cooked nonetheless you want them)
  • Plum tomatoes, diced
  • Fresh basil, chopped
  • Avocado (non-obligatory)

Sauce Ingredients

1/4 cup non-fat plain Greek Yogurt
Hot sauce
2 Tbsp water

How To

  1. In a skillet on medium warmth, soften garlic and onions for 3 minutes. I exploit a splash of water instead of oil or butter.
  2. Add black beans. Cook for one more 3-5 minutes.
  3. While veggies are cooking, put together your eggs the way in which you want them.
  4. For the sauce mix yogurt + scorching sauce + water.
